New Year's Yellow Curry
New Year's Yellow Curry. Yum.
Start by simmering your favorite veggies. My selection for the evening was snow peas, eggplant, bok choy, and onion. Steam your veggies in a large pan with 1/2 c. of water with a lid. Cook your veggies for about 8 minutes or until tender. Keep an eye on them, you may need to add more water.
Once veggies are fully cooked add a bottle of Trader Joe's Thai Yellow Curry sauce and one can of light coconut milk to your mix.
Simmer for 5 minutes and serve over Jasmine rice.

YUM! I've never cooked with bok choy, but I want to! Looks wonderful and so healthy!
