Faux Fried Chicken

Faux Fried Chicken

1 lb chicken tenders, boneless, skinless
1 1/2 cups buttermilk
1 tsp black pepper
1/2 tsp garlic powder
1/2 tsp onion powder
several dashes hot sauce
2 cup plain bread crumbs
1/2 flour
1/2 tbs cayenne pepper
1/2 tbs black pepper
1 tsp sea salt

Add buttermilk, pepper, garlic powder, onion powder and hot sauce. Put chicken in a Pyrex dish and cover with buttermilk mixture for several hours or overnight.

When ready to cook heat oven to 375 degrees. Mix bread crumbs, flour, cayenne pepper, black pepper and sea salt, add more cayenne/black pepper based on preferred spiciness. Dip chicken in bread crumb mixture and place in baking dish. Bake chicken until fully cooked, juices should be clear and internal temperature 165 degrees. Approx. 20 mins for chicken tenders.



Greek Cold Grain Salad

1 1/4 dry grain, cooked to package instructions (I used a medley but orzo, cous cous, or quinoa can be used)
3/4 cup fresh baby spinach
1 large tomato, diced
1/2 cup cucumbers, diced
1 cup Greek yogurt
1 juice of lemon
2 tbs fresh basil
3\4 cup crumbled feta cheese

Options: add kalamata olives, capers, diced red or green onion, or any flavors you love

Cook grain to package instructions. Once grain is cooked, while still hot stir in spinach to wilt leaves. Place grain and spinach mixture in fridge until chilled. After grains are chilled, apprx an hour or more, stir in tomato, cucumber, Greek yogurt, fresh lemon juice, basil and feta. Served chilled.
