Frozen & Fast

After spending a week in Denver for work I needed something healthy and fast. Having not made it to the grocery store yet, frozen was my only option. For this meal I had grilled eggplant and zucchini with spinach ravioli. Quick and simple.

  1. YUM! Do you do anything to the eggplant before cooking it?? I've tried grilling it and stuff before and it comes out blandish..or bitter-like?...I didn't like it either way! I've heard that you salt it and soak it in water before hand? True?
