Sweet Tooth

I'm normally one who can turn down dessert. I don't get intense chocolate cravings. Cheesecake and carrot cake never haunts me. Chocolate bars don't scream out my name at the grocery store. What I'm trying to say is usually it's easy for me to decline the sweets at the end of a meal. Now as for that extra glass of wine, that's a different story...

However this past week I had a craving I haven't been able to kick. All I've been thinking about is brownie sundaes. I rarely eat ice cream, let alone brownies, but this week they've been on my mind nonstop. I finally had to give into the craving. I went to the grocery store and found this little delight!


Gave it a quick look over...


Just add plain yogurt? SOLD! With some ice cream of course!


Kicked that craving in the butt! Now what to do with the rest of these brownies...

Garden Fresh

I came home from my work trip to find a delicious surprise in my garden.


Nine ripe tomatoes! Of course the only sensible thing to do was to make this!


Welcome to my recent breakfast, lunch and dinners. Yes, I eat tomatoes and fresh mozzarella for breakfast, along with just about anything else that isn't waffles, pancakes, cereal or eggs. I'm just not a breakfast fan!

Grab-n-Go

Now I don't know about everyone else, but as much as I try to eat fresh, clean, unprocessed food, it's just not always an option. On those days I have to go for my back up health-ier options. While I don't suggest these are foods you add into your daily diets, the do make for quick convenient meals when you're traveling. or if you've returned from a work trip and have absolutely no food at home.

Subway 6" Veggie
with pepper jack cheese and honey mustard sauce,
and side of Baked Lays and Light Lemonade

464 calories, 9.5 g fat, 66 g carbs, 12 g protein

Taco Bell Chicken Fresco Tacos (x2) and side of Pinto Beans

510 calories, 14 g fat, 63 g carbs, 34 g protien

San Diego Staple

There's been someone special in my life this week in San Diego.


I've been hanging out a lot this week at Tin Fish!


But what can I say, they're shrimp tacos are delicious! (and usually much better presented when not stuffed in a to go box). ;-)


I've had these shrimp tacos, umm, more days then I can count this week for lunch. They're grilled salmon and halibut tacos are also awesome! I've been strong and avoided fries all week, but today I finally had to give in to their criss-cross salty goodness. At least the taco was semi-healthy, right?

I'm going back to Cali!

To Cali, to Cali! Never gets old, does it?!! I flew to San Diego Wednesday day for work. I'm sure I've mentioned this before but I absolutely love, love, LOVE this city! Its just such a cool atmosphere. I love being in the harbor and the old city feel of Gaslamp district! And I hear they have beaches to but I have yet to make it because I work entirely too much... But check out this gorgeous view of the harbor!


Props to my company and clients for hooking me up with great hotels [95% of the time]!

My schedule has been pretty hectic this week. I was able to go for a 2 mile run yesterday along the water but my shoes I brought don't give me the support my knees need for longer runs. Still somethings always better than nothing. When I'm working 12+ hour days any workouts are impressive to me!

Now for some EATS!

I enjoyed this salad while watching the sunset yesterday after my run. Yummy Cobb salad with lots of crispy bacon.


And some vino! :-)


Today consisted of torture, oh I mean work, from 6:00am to 7:00pm!!! It was very stressful. Let just say at times all I could think about was murdering unicorns! Needless to say as soon as I got the chance I ran for this...


And some hotel room snacks of Laughing Cow and salmon pate.


I'm now finishing up a book and the then headed to bed got a 5:30am [glug!] start tomorrow!

Weekend

This past weekend I dusted off my bike and took her for 30 mile bike ride around Lake Mead. It's been awhile since my bike and I hungout but we had a great trip and plan to do it again soon.

Found It!

It was plugged in my kitchen right where I left it a month ago. Totally normal place to keep a camera charger, right?! Here's my deliciously filling lunch who should have made a debut earlier.


This bad boy was super quick and easy and extremely filling. First I steamed a bed of spinach and place on the bottom of the bowl. I then added a big scoop of cottage cheese and added 2/3 cup whole wheat pasta on top. For the sauce I heated some roasted eggplant with marinara and added capers and kalmata olives to make a tasty puttanesca sauce. Dumped the sauce over the noodles, added more cheese, mix, and YUM! I actually wasn't even able to finish all the pasta!


Adding lots of veggies to your pasta is a great way to fill up on less carbs. And adding cottage cheese may seem a little odd to some, but cottage cheese is just like ricotta's brother, except lower fat. It actually melts and gets really creamy and delicious in pasta plus adds a big punch of protein. I highly recommend it!
